<br />
Baking is a hobby that few will have time for. Especially when in JC where things are just a bunch of CRAB. I do hope that these two years will pass fast.<br />
But then, there's always a popular saying: Carpe Diem<br />
Just treasure the time now and embrace future challenges.<br />
<br />
This blog is really useful to find the recipes I have already tried and give a thumbs up to.<br />
Sometimes, I do wish that I could spend more time here.<br />
<br />
Anyway, see the white chocolate?<br />
I hardly use white chocolate.<br />
Strange eh?<br />
This was bought somewhere in Feb or March.<br />
But I have never opened it.<br />
So as it is nearing its expiry date I decided to do something with it.<br />
<br />
This is an absolutely fast and easy recipe.<br />
Back about 3 years ago,<br />
this was the only cake I succeeded in.<br />
Okay, technically not a cake,<br />
A muffin then.<br />
<br />
Rubbing-in method is quite manageable,<br />
But bleh - the sticky feeling in your fingers.<br />
The melting butter that softens in your hand<br />
Gross.<br />
Just get use to it.<br />
30 minutes of work, then hey presto job done.<br />

No recipe involved.<br />
<div>
Just based on my gut feeling and usual proportions.</div>
<div>
<br /></div>
<div>
<u>Ingredients:</u></div>
<div>
1 Egg</div>
<div>
90g Flour</div>
<div>
20g Cocoa Powder</div>
<div>
60g Sugar (will reduce to about 50-55g next time)</div>
<div>
60g Butter</div>
<div>
1 1/4tsp Baking Powder</div>
<div>
A pinch of Cinnamon</div>
<div>
1-2tbsp of Water</div>
<div>
White Chocolate Chips</div>
<div>
<br /></div>
<div>
<u>Steps:</u></div>
<div>
<u>(About 5 or 6 muffins)</u></div>
<div>
Preheat oven to 180degrees celsius</div>
<div>
<br /></div>
<div>
1. Sift the Cocoa Powder, Flour, Cinnamon and Baking Powder together. (Dry ingredients)</div>
<div>
2. Mix well. </div>
<div>
3. Cut up the butter into small pieces </div>
<div>
4. Start Rubbing-In method. Stop when the mixture resembles breadcrumbs. Do not worry about having few big "crumbs" its alright!</div>
<div>
5. Create a hollow centre within the mixture and add the egg in. </div>
<div>
6. Stir evenly and pour the water in where the mixture is dry. Mix until even but...</div>
<div>
7. DO NOT OVERMIX! XD The cake will turn tough! I know that best. (The time where my cakes tested like urghhh horrific</div>
<div>
8. Scoop into the lined muffin tray and pop them into the oven</div>
<div>
9.Bake for 15-18min or until the cake tester comes out relatively clean. </div>
<div>
<br /></div>
<div>
Easy right!</div>
<div>
Yes.....</div>
<div>
Really, believe me. </div>
<div>
<br /></div>
<div>
I gave one to my primary school mate, one to my tutor, one to my mum, two to my sis, one to my sis's tutor, one to my granddad.<br />
Oh I just realised! I made 7 muffins, hahaha. </div>

This is a really sweet website. </div>
<div style="text-align: center;">
Recently with so many things zooming past</div>
<div style="text-align: center;">
I can't help but feel a little down at times</div>
<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
The pictures in here do help me raise my mood a bit</div>
<div style="text-align: center;">
And remind me that life isn't all that bad</div>
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="http://farm8.staticflickr.com/7287/8743126140_ced094e7b2_o.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="317" src="http://farm8.staticflickr.com/7287/8743126140_ced094e7b2_o.jpg" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
For me, I'm really a private person</div>
<div class="separator" style="clear: both; text-align: center;">
Yes, I can be artificially outgoing but I guess it doesn't last very long</div>
<div class="separator" style="clear: both; text-align: center;">
Sometimes, I feel that I always need to rely on one friend and one friend only</div>
<div class="separator" style="clear: both; text-align: center;">
It's called a best friend for a reason, you see</div>
<div class="separator" style="clear: both; text-align: center;">
Hey, if you do see this, be honoured!:)))</div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="http://farm8.staticflickr.com/7325/8746287504_57e6234290_o.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="317" src="http://farm8.staticflickr.com/7325/8746287504_57e6234290_o.jpg" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
I'm not very sure about this though</div>
<div class="separator" style="clear: both; text-align: center;">
Well, this isn't exactly the thing I need right now. </div>
<div class="separator" style="clear: both; text-align: center;">
Next please</div>
<div class="separator" style="clear: both; text-align: center;">
<a href="http://farm9.staticflickr.com/8409/8761566245_c1fde22707_o.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="317" src="http://farm9.staticflickr.com/8409/8761566245_c1fde22707_o.jpg" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
I believe in this a lot</div>
<div class="separator" style="clear: both; text-align: center;">
Because the more you try to reach for the stars</div>
<div class="separator" style="clear: both; text-align: center;">
The brighter the stars shine</div>
<div class="separator" style="clear: both; text-align: center;">
The more you try to reach for the moon</div>
<div class="separator" style="clear: both; text-align: center;">
The more the moon lights up</div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="http://farm6.staticflickr.com/5348/8798128529_39716e7e6d_o.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="317" src="http://farm6.staticflickr.com/5348/8798128529_39716e7e6d_o.jpg" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
Only when you go through struggle and pain, </div>
<div class="separator" style="clear: both; text-align: center;">
you'll understand the taste of sweetness</div>
<div class="separator" style="clear: both; text-align: center;">
Life's not a smooth journey</div>
<div class="separator" style="clear: both; text-align: center;">
But remember, bitterness comes before enjoyment</div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
That's the end for now.</div>
<div class="separator" style="clear: both; text-align: center;">
Meaningful quotes do make an impact on our lives</div>

<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Nowadays, I'm really overwhelmed by the homework that has been accumulating on my desk.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Time is forever the issue, really.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">I am a person who always needs a whole lot of time to do things I want because I feel that</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">LIFE ISN'T JUST ABOUT STUDYING</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Blogging is also one of them of course.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">BAKING is definitely one too</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">But nowadays, I'm far too lazy to bake</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Tired and lazy rather haha</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">So these days, I haven't been baking much.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Yep, I admit that</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">BUT I BAKED YESTERDAY!</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">I DID I DID, But not there usual sweet treats like cakes, biscuits and the related</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">But BAKED POPCORN CHICKEN</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Well, hmm, popcorn chicken does not really seem like some health snack</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">But it's different, completely different when you churn out your own</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Chicken breast with skin- removed</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Healthy Meiji Biscuits</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">No weird artificial sauces except for soy sauce</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">How's that?</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Not top bad right? :D</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<img height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg5zZgURFWtFEWQH60gL_blRck1VUMV6YMimWFigixuHncg32trJYMqDUeYGMgdBRSBaGX_zL_Kqx9N6Lqu0PZR-FRqnSstDmKft3KOr8QG6uepIMsnks-oEpy36essCegXQLMrtNIijtQ/s320/20130524141745.jpg" width="320" /><br />
<br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">A little bit more on the taste</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">I actually nibbled on the breading a little on its own and I would say it tasted marvellous</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">The garlic powder was certainly the star for the punch it gave </span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">And made it much closer to the real unhealthy KFC or commercial popcorn chicken </span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">But eat it real fast because the crispness doesnt stay for long</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">The chicken was very nice though</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">My sister went like "WOW" and</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">My mum said" I'm really impressed by you" </span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">It wasn't salty as I used only 0.5 tsp of soy sauce</span><br />
<span style="color: #6aa84f; font-family: Georgia, Times New Roman, serif;">Fine with it though, I don't really like the feeling of salt lingering on my tongue</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">This wonderful recipe is kindly shared by Food-4 Tots </span><br />

<br />
<span style="font-family: Georgia, Times New Roman, serif;">I tweaked it a bit here and there</span><br />
Here's my version of the recipe!<br />
<br />
<span style="color: #38761d;">HEALTHY POPCORN CHICKEN</span><br />
<br />
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;"><strong>Ingredients:</strong></span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;">230g chicken breast, skin removed<br />1 packet of Meiji Plain Biscuits<br />2 tbsp plain flour<br />1 egg white</span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d;"><br /></span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;"><strong>(MARINADE:For the chicken)</strong><br />1 tsp light soy sauce (increase if preferred to 1 1/2 tsp)<br />½ tsp sesame oil<br />¼ tsp white pepper</span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;"><br /></span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;"><strong>(COATING:For the crispy part that you love) </strong><br />4 tsp garlic powder </span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;">¼ tsp paprika </span></div>
<div style="line-height: 21.59375px;">
<span style="color: #38761d;"><span style="font-family: Georgia, 'Times New Roman', serif;">¼ chinese 5-spice powder (五香粉)</span><span style="font-family: Georgia, Times New Roman, serif;"><br />¼ tsp freshly ground black pepper</span></span></div>
<div style="font-size: 12px; line-height: 21.59375px;">
<span style="color: #38761d; font-family: Georgia, Times New Roman, serif;"><br /></span></div>
<br />
<ol>
<li><span style="color: #38761d; line-height: 2em;">Cut up the chicken breast into bite-size pieces and then massage the chicken pieces with the marinade, (labelled ' For the chicken' of course haha). SPA TIME! Cling wrap and </span><span style="color: #38761d;"><span style="line-height: 32px;">refrigerate for >1h.</span></span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Crush the Meiji Biscuits before opening the packet. Use your palm and vent all your suppressed anger. </span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Add in all the garlic powder, paprika, chinese 5-spice powder, and black pepper. Remember to mix well!!!</span></li>
<li><span style="color: #38761d; line-height: 2em;">Preheat the oven to 190 Degrees </span><span style="color: #38761d;"><span style="line-height: 32px;">Celsius </span></span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Take out the marinated chicken pieces from the fridge and massage them AGAIN with 2tbsp of flour </span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Prepare 2 bowls, one will be for the egg white and the other for the coating (crushed Meiji biscuits and friends) </span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Dip the chicken pieces into the egg white, then the coating, one by one, (I used a pair of chopsticks for this)</span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Line them on a greased baking tray. </span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">Bake the little chicken bites for 15min</span></li>
<li style="line-height: 2em;"><span style="color: #38761d;">THEN EAT! FAST!!!!</span></li>
</ol>
<span style="line-height: 32px;">Manageable right? </span><br />
<br />
<div>
<span style="line-height: 32px;">Healthy right! </span></div>
<div>
<span style="line-height: 32px;">I will try it again! But maybe pan-fry them the next time so that they don't lose their crisp so fast!! :/ And maybe a little of curry powder too ;-)</span></div>
<div>
<span style="line-height: 32px;">Till the next time! BYE.... </span></div>

My love for baking ought to be burning! Ashamed of myself I would simply say. It's time I practice some of my skills! In case I completely forget them. Well, soon soon, I'll be back!  Just wait and see! </p>

<div style="text-align: center;">
Butter and sugar are the best pair on earth. </div>
<div style="text-align: center;">
Now, just close your eyes and imagine.</div>
<div style="text-align: center;">
<br /></div>
<img src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhYJ8VXzJ5vHjxFFP4wQB1DJBA-Mjr11ae856L98auhACV1SY0WK4Ry06x3dTI1BNQzhrHPNvmjbYZjJV3qfY4qMXZsw0VwvTYQUAWEXJveR0cHzdTFdwAus21lopi6yjkK3Y3jRnyyHU8/s320/IMG-20130417-WA0023.jpg" /><br />
<br />
Here it goes, reach for one. Go on, take one. Don't be shy.<br />
<br />
This cookie is within your fingers. You can feel the uneven texture of the cookie. But it feels fragile. It seems like it is going to crumble in your hands. Little bits of the cookie falls into your palm. Oh! The specks of sugar too. It feels slightly sticky. But for now, who cares?<br />
<br />
Then inhale. Ahhh, that's butter.<br />
<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgO9-HR1L2hcaYjvgelCqdeKUAvwbf_qEXjnxIPpHE3A1pu0UIAe5Zfkjn-GYBjxe__fouCA5h0IH6bDnFtqKG-_qsisI3UV5eeTx7xjYJlnIRaC8hOGhoOrRnAzX2IjC6tAyZH-2nk_J8/s1600/IMG-20130417-WA0024.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgO9-HR1L2hcaYjvgelCqdeKUAvwbf_qEXjnxIPpHE3A1pu0UIAe5Zfkjn-GYBjxe__fouCA5h0IH6bDnFtqKG-_qsisI3UV5eeTx7xjYJlnIRaC8hOGhoOrRnAzX2IjC6tAyZH-2nk_J8/s320/IMG-20130417-WA0024.jpg" width="320" /></a></div>
<br />
Bring your hand closer to your mouth. Allow your eyes for a visual treat just for a while. Just before your stomach rumbles. Just before your mouth spares no mercy.<br />
<br />
Your teeth sinks in, the buttery scent of the cookie welcomes you into the cookie haven. For a moment, worries and frustrations seem to have escaped from your tired mind.<br />
<br />
The sugar isn't to be forgotten too. Seconds of sweetness bursts into your mouth. Before the cookie gets crumbled and goes into your stomach.<br />
<br />
YOU ARE NOW A HAPPY PERSON.<br />
<br />
<img src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjf5RHJ7ds_B5Vc4wtZ6gstPQnc9H1eErfE9Dr3S-IXaiA_ZKzHfWDVseLiPycec6LZBljmsGkB-M0JbKklYuMAm-GeSIEwATbeN_-eb9vxuUu1Dd_i0N-wC_nevEgVq6dltsR1udBMau8/s320/IMG-20130417-WA0020.jpg" /><br />
<br />
This cookie is nothing too complex for the tastebuds . It's just a butter sugar cookie. But doesn't this cookie flood you with childhood memories where there wasn't much variation in snacks? Doesn't this somehow bring you a sense of comfort.<br />
<br />
That's it. It's the wonder of butter and sugar.<br />
<br />
Anyway, these cookies were brought for my class today. Hoped they enjoyed the once-in-a-while treat. Yay, after eating, I made them take photos and edit them and hahaha here they are.<br />
<br />
Thanks kind people thanks thanks thanks.<br />
<br />
P.s. Sometimes I wonder how many times my friends click here. Hmmm<br />

Don't ask me why I bake at weird times. I don't know too. It's just that I have been so worn out these days but school and cca that I haven't been baking. Feel tremendously guilty. I am scared that just someday my skills and little experience from my ridiculous experiments 2 years ago will be gone down the gutter.<br />
<br /></div>
<div dir="ltr">
Concert's coming. And from next week onwards, it's not just twice a week. Fridays too as well. My awesome friends will feel it too. All the stress and of course fatigue. The blind leading the blind I say, we have no instructor at all. </div>
<div dir="ltr">
Every practice the chairperson comes and tells us where we have to learn until and I am behind time after missing a mere single practice.</div>

Okay enough of my rants, say hi to my muffins.</div>

These little specks of magical dust. Haha I'm just joking. They are from the Lipton tea bags. The really more expensive ones I guess. Here it is.<br />

<br />
<span style="font-family: "Trebuchet MS", sans-serif;">School has officially started and I'm officially busy. I do hope that I can get into the CCA that I chose. God bless please. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Anyway, I had visitors over the weekend. So there was this little shy K2 girl who came to my house. She was really a little pampered I guess, hiding behind her dad and squirming around. She hit her dad a lot i dont know why. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">She didnt talk so I tried to make her watch me bake. Well, she seemed pretty interested and so she stayed to watch for as long her dad was with her. Apparently she had frequently went to play baking games on the IPad. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Problem was, I realised there wasn't any more butter and I need to make the muffins really quickly. Limited time! Then I recalled the batter baker's recipe:</span> <a href="http://thebatterbaker.blogspot.sg/2010/08/eggless-double-chocolate-chip-cupcakes.html">http://thebatterbaker.blogspot.sg/2010/08/eggless-double-chocolate-chip-cupcakes.html</a><br />
<br />
<span style="color: #a64d79; font-family: "Trebuchet MS", sans-serif;">There wasn't much hassle in making them. I only took 15min of preparation before popping them into the preheated ovenAnd they came out rather well with the choc chips dotted on top.</span><br />
<span style="color: #a64d79; font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="color: #a64d79; font-family: "Trebuchet MS", sans-serif;">I added more liquid simply because I had a small egg, I also reduced the amount of oil to make them even healthier.</span> Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-832173209847832200.post-89933490124505347372013-02-01T21:39:00.000+08:002013-02-04T15:32:44.701+08:00Chocolate Oatmeal Cookies<span style="color: #666666; font-family: "Trebuchet MS", sans-serif;">Who says Un-traditional CNY cookies cannot be eaten during CNY?</span><br />
<span style="color: #666666;"><span style="font-family: "Trebuchet MS", sans-serif;">Nobody! </span><span style="font-family: "Trebuchet MS", sans-serif;">So I decided to try to bake some other cookies too!</span></span><br />
<span style="color: #666666; font-family: Trebuchet MS;">Here's a nice little healthy oat cookie amongst all the delicious but sinful cookies.</span><br />
<span style="color: #666666; font-family: Trebuchet MS;">It does satisfy the tummy too so don't worry about the taste</span><br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">Cookies are usually easy to make.For this cookie, I took only about 20min from start to shaping the cookie. Easy easy. Best part is that I only used one bowl. This was done at my aunt's house but most of the work was by me. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"> </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Going to my aunt's for about a month (once/week), I experimented with many new recipes. I really have to thank her for tolerating my nonsense - everything is okay and messing up of her dining table and kitchen. I do hope that she enjoyed baking with me too (baking alone is no fun). Now, this is the end of the baking experiments, at least in a while.</span><br />

<span style="color: #45818e; font-family: "Trebuchet MS", sans-serif;">Really thank Happy Homebaking for strongly recommending this recipe. I wasn't thinking of making them at first, was about to try almond cookies. But I'm very glad they turned out well, especially after failing at my 1st swiss roll attempt. They were a bit chewy though, I think I would add some corn flour/ rice flour if I do make them again. Or maybe its due to the addition of oatmeal?</span><br />

pinch of salt<br /><br />*Prepare more flour for dusting purpose (I prepared 250g –
half a packet). </span><br /><span style="font-family: trebuchet ms;"></span><br /><span style="font-family: trebuchet ms;"><strong>Method:</strong></span><br /><span style="font-family: trebuchet ms;">1) Line a large Pyrex bowl with greaseproof
paper, microwave the flour and pandan leaves on high 1 min at a time for 5
times, stirring every minute. Set aside, cool completely before
using.*</span><br /><span style="font-family: trebuchet ms;">2) Mix coconut milk
with pandan extract and salt.</span></span><span style="color: #134f5c;"><span style="font-family: trebuchet ms;">3) Cream margarine with sugar and yolk till
sugar dissolves.<br />4) Add in 75ml coconut milk and mix well.</span></span><span style="color: #134f5c;"><span style="font-family: trebuchet ms;">5) Add flour to mix till non-sticky dough is
formed. If dough is too dry, add more coconut milk but add 1 tsp at a time,
otherwise, dough may be too sticky. Leave dough to rest covered with a damp
cloth.<br />6) Take a quarter of the dough and roll dough on a floured table to
3/8”(this thickness is necessary to obtain a nice size cookie) and use cookie
cutters to cut into shapes. Using a pincher to pinch desired designs (optional).
Alternatively wooden moulds can also be used and that omits rolling the
dough.<br />7) Bake on lined tray in preheated oven at 150C for 15 mins. Cookie
should not brown.**<br />8) Remove to cool completely before storing.<br /><br />* I
do not own a microwave, so I use my oven to "bake" the flour instead. I baked at
120C for about 40 mins, stirring every 10 mins. Last round I increased the temp
to 150C. Alternatively, you may "fry" the flour using a wok over low heat. At
the end, the flour should be fluffy and dry, slightly yellowish.<br />**I only
baked for 12 mins and the cookie is
cooked.<br /><br /><strong>Tips:</strong><br />1)Taste the cookie after it has cooled
down, if the center is uncooked or still soft, return to oven to bake for a few
more minutes. The texture should be crispy and
melt-into-the-mouth.</span><br /><span style="font-family: Trebuchet MS;">2) It
takes quite a while for the flour to cool down completely. So you may prepare
the flour the day before and keep it in airtight container after cooling
down.</span></span> </div>
<div class="separator" style="clear: both; text-align: left;">
</div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">I was quite satisfied with the taste</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">But the texture was a let-down</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">According to the recipe</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">150degrees for 15min</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">But mine was still raw then</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Trebuchet MS;">I think I should do it for </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"></span> </div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">Well, I think I will not try this again. (failed twice plus it can get mundane)</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">Next attempt probably something with almond</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">My dad bought a huge packet for me (half kg)</span></div>
<div class="separator" style="clear: both; text-align: left;">

<span style="font-family: "Trebuchet MS", sans-serif;">Chinese New Year is just round the corner. </span><span style="font-family: "Trebuchet MS", sans-serif;">And suddenly out of nowhere you see transparent bottles of goodies everywhere.</span><span style="font-family: "Trebuchet MS", sans-serif;">Really practically everywhere. </span><span style="font-family: "Trebuchet MS", sans-serif;">Pineapple tarts are the sort-of upper class goodies that cost quite a lot.</span></div>

<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Trebuchet MS;">It was really tiring. First, the rubbing in of butter into flour. Then, the rolling of pineapple jam into balls. Before finally wrapping the pineapple jam balls into the cookie dough. </span></div>

<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Trebuchet MS;">Undoubtedly, it was tedious work. Thank god we bought ready made pineapple jam.</span></div>

<span style="color: #0b5394; font-family: "Trebuchet MS", sans-serif;">11. Egg Wash again and bake for another 15min at same temperature</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Trebuchet MS;"></span> </div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;">Comments:</span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;">I reduced quite a substantial amount of butter because it was really scary handling so much butter at one time. But come to think about it, I wouldn't do so next time. </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;"></span> </div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;">I will also replace 4tbsp of flour with 4tbsp of custard powder and add 1tbsp of milk powder when i do it again. </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;"></span> </div>
<div class="separator" style="clear: both; text-align: left;">
<span style="color: #3d85c6; font-family: Trebuchet MS;">The jam was slightly sourish, so I think I would try Phoon Huat's Red Man the next time</span></div>

<span style="font-family: Trebuchet MS;"></span><br />

<br />
<br />
<span style="font-family: "Trebuchet MS", sans-serif;">MY MOST RECENT BAKE:</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">I went to my aunt's house yesterday. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">We decided to bake the Singapore classic Rotiboy. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">But I guess it was a mistake on my part. I read 1 <strong>table</strong>spoon of instant coffee as 1 <strong>tea</strong>spoon:/ The buns turned out nearly tasteless:(</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">How careless can I be. Really. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Well, we baked something else whilst the buns were undergoing proofing. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Hokkaido Chiffon Cupcakes. It was the first time for both of us. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">It was a pleasure to relish in the homely smell of the chiffonlets baking. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">My aunt was even more ecstatic when she witnessed the batter, </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">They turned out pretty, didn't they?</span><br />
<span style="font-family: Trebuchet MS;">Even my piano teacher was impressed. (She requested to see them, not me hehe)</span><br />
<span style="font-family: Trebuchet MS;">She went: WOW</span><br />
<span style="font-family: Trebuchet MS;"></span><br />
<span style="font-family: Trebuchet MS;">PS : We didnt have custard powder unfortunately, otherwise the cream would be much more better I guess. </span><br />
<br />
<span style="color: #666666; font-family: Trebuchet MS;">Original recipe from Nasi Lemak Lover (here):</span><br />
